Chicken with Lemon and Capers

  • 1 tablespoon olive oil
  • 2 whole boneless chicken breasts (halved)
  • 1/3 cup white wine
  • 1 tablespoon lemon juice
  • 1 teaspoon grated lemon zest
  • 1 tablespoon capers
  • 2 tablespoons chilled butter (cut into small pieces)


Step 1. Heat the oil in a heavy skillet over medium heat until hot but not smoking.
Step 2. Add the chicken and cook for 4 minutes and each side, or until browned.
Step 3. Remove the chicken from the skillet and keep warm.
Step 4. Add the wine, lemon juice, lemon zest, and capers to the skillet.
Step 5. Bring to a boil, lower the heat, and simmer for 2 minutes, maiking sure to scrape up any brown bits from the bottom of the skillet.
Step 6. Whisk in the butter, 1 piece at a time, and cook over low heat for 1 minute, or until heated through.
Pour the sauce over the chicken and serve immediately.
