Lemon Chicken Conchiglie

Chicken pieces are cooked in a succulent lemon and mild mustard sauce, then coated in poppy seeds and served on rice or pasta shells.


  • 4 chicken thighs
  • 2 tablespoons butter (melted)
  • 2 tablespoons mild mustard ((like Grey Poupon))
  • 1 tablespoon lemon juice
  • 1/2 tablespoon brown sugar
  • 1/2 teaspoon paprika
  • 1-1/2 tablespoon poppy seeds


Step 1. Arrange the chicken pieces, smooth-side down, in a single layer in an overproof dish. Heat oven to 400 degrees.
Step 2. Mix together the butter, mustard, lemon juice, sugar, and paprika in a bowl and season to taste with salt and pepper.
Step 3. Brush the mixture over the upper surfaces of the chicken pieces and bake in oven for 15 minutes.
Step 4. Remove the dish from the oven and carefully turn over the chicken pieces. Coat the upper surfaces of the chicken with the remaining mustard mixture, then sprinkle the chicken pieces with poppy seeds and return to the oven for an additional 15 minutes.
Step 5. Serve with pasta or rice and a vegetable.
