Pasta with Oyster Mushrooms

  • 16oz oyster mushrooms
  • 1-2 tablespoon garlic (minced)
  • 4 tablespoons butter
  • 2 cups milk
  • 1/2 cup chicken or vegetable broth
  • 2 teaspoons lemon juice
  • 1 cup tomatoes (chopped)
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 12oz fettucine (cooked, warm)
  • 2 tablespoons parmesan cheese (grated)


Step 1. Separate oyster mushrooms into pieces
Step 2.
Saute mushrooms and garlic in butter in a large skillet until soft, about 5 minutes
Step 3. Stir in flour. Cook 1 minute
Step 4.
Add milk, broth, and lemon juice to skillet; heat to boiling
Step 5. Reduce hear and simmer, uncovered, until liquid is reduced by half
Step 6.
Stir in tomato, salt, and pepper; cook over medium heat until hot
Step 7.
Spoon over pasta and top with cheese
