Broiled Pork with Tomato and Olives

  • 2 tablespoons olive oil
  • 1 Large onion (chopped)
  • 1 clove garlic (chopped)
  • 4 lean pork loin steaks
  • 14oz tomatoes (canned or fresh)
  • 2 3/4oz black olives (pitted)
  • 2 tablespoons fresh basil (shredded)
  • freshly grated Parmeson cheese (grated)


Step 1. Heat the oil in a large skillet. Add the onion and garlic and cook, stirring, for 3-4 minutes, or until they are just beginning to soften.
Step 2. Add the tomatoes and let simmer for about 5 minutes, or until the sauce starts to thicken.
Step 3. Cook the pork steaks, under a pre-heated broiled, for 5 minutes on each side, or until the meat is golden and cooked through. Keep warm.
Step 4. Add the basil and olives to the sauce in the skillet and stir quickly to combine.
Step 5. Top the steaks with the sauce and sprinkle with freshly grated Parmeson cheese.
