Mustard-Crusted Pork

  • 2 tablespoons soy flour (or tofu flour)
  • 1 tablespoon mustard powder
  • 1/2 teaspoon white pepper
  • 2 tablespoons olive oil
  • 1lb boneless center-cut pork chops (cut into 3 strips)
  • salt to taste


Step 1. Combine the flour, mustard powder, and pepper in a bowl and mix well.
Step 2. Dust the pork with the flour mixture.
Step 3. Heat 2 tablespoons of oil in a heavy skillet over medium heat until hot but not smoking.
Step 4. Add the pork and brown 2-3 minutes per each thick side.
Step 5. Sprinkle with salt and serve.
