Pork Casserole with Tomato and Mushrooms

A quick and easy hearty casserole, enriched with a flavored tomato-mushroom sauce. Seve with sauteed spinach and olive oil.


  • 2 tablespoons olive oil
  • 4 center-cut boneless pork chops (sliced against the grain into 3 pieces)
  • 1 Medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 Medium tomato (chopped)
  • 1/2 cup button mushrooms (sliced)
  • 1/4 cup chicken stock
  • salt and pepper (to taste)
  • 1/4 cup pitted Kalamata or Gaeta olives ((optional))


Step 1. Heat the oil in a large, heavy skillet over medium-high heat until hot but not smoking.
Step 2. Add the pork pieces and saute for 3 minutes on each side.
Step 3. Add the onion to the skillet and saute for 3 minutes, stirring occasionally.
Step 4. Add the garlic, tomato, mushrooms, chicken stock, salt, and pepper, and bring to a boil.
Step 5. Lower the heat, cover, and simmer for 15 minutes, stirring occasionally.
Step 6. Uncover, stir in the olives, if using, and simmer for another 5 minutes.
Step 7. Serve immediately.
