Austin Black Beans

Ingredients

  • 1 1/2 cup black beans (cooked)
  • 1/2 tablespoon bacon grease (or peanut oil or canola oil)
  • 1/2 onion (diced)
  • 2 cloves garlic (minced)
  • 2 chipotles in adobo (chopped or 1/2 tsp chipotle powder)
  • 2 tablespoons fresh epazote (chopped)
  • 1/4 teaspoon cumin
  • 1/4 cup cilantro (chopped)
  • 1/2 tablespoon tomato paste
  • 1/8 cup lime juice
  • 3 cups water
  • 1 cup chicken broth (or vegetable broth)
  • salt to taste

Directions

Step 1. Sauté the onions for 5 minutes
Step 2. Add the garlic for one minute.
Step 3. Add the beans, chipotle, epazote and half the cilantro.
Step 4. Cover beans with water and chicken broth, bring to a boil, and then reduce heat to low. Stir occasionally.
Step 5. After 15 minutes, add cumin, tomato paste, lime juice, salt and remaining cilantro
Step 6. Cook for 15 more minutes or until beans are tender.
Step 7. Smash a few beans against the side of the pot with a spoon to thicken the broth, stir the pot and serve.
