Broccoli with Mint-Curry Sauce

  • 2 broccoli crowns
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon curry powder
  • 1 tablespoon fresh mint (chopped)


Step 1. Cut florets from broccoli crowns (save the stems for your vegetable stock)
Step 2. Steam florets for 4 minutes
Step 3. In a skillet, heat butter and olive oil
Step 4. Mix in curry powder
Step 5. Add steamed broccoli florets and toss to coat with butter/oil mixture
Step 6. Cook until some of the florets look toasty — about 5-6 minutes
Step 7. Add chopped mint in the last 30 seconds or so and stir.
