Mixed Bell Peppers with Thyme

These bell peppers can be used as an antipasto, as a side dish, or as a relish to accompany meat and fish.


  • 2 each read, orange and yellow bell peppers
  • 4 tomatoes (halved)
  • 3 cloves garlic
  • 1 onion (sliced in rings)
  • 2 tablespoons fresh thyme
  • salt and pepper


Step 1. halve and seed the bell peppers. Place them,cut-side down, on a cookie sheet and cook under a preheated broiler for 10 minutes. (Place as close to broiler as possible, with broiler set on high, if that's an option you have).
Step 2. Add the tomsatoes to the cookie sheet and broil for 5 minutes, or until the skins of the bell peppers and tomatoes are charred.
Step 3. Put the bell peppers into a plastic sweat bag for 10 minutes to sweat, which will make the skin easier to peel. Remove the tomato skins and then coarsely chop the flesh.
Step 4. Peel the skins from the bell peppers and then slice the flesh into strips.
Step 5. Heat the oil in a large skillet and cook the garlic and onion for 3-4 minutes, or until softened.
Step 6. Add the bell peppers and tomatoes to the skillet and cook for 5 minutes. Stir in the fresh thyme and season to taste with salt and pepper.
Step 7. Transfer to serving bowls and serve warm or chilled.
