Potato Soup With Sausage and Kale

Serves 4


  • 2 tablespoons olive oil (or vegetable oil)
  • 1lb sausage (Kielbasa or Italian, sliced into 1/2-inch-thick slices)
  • 1 cup white or yellow onion (diced)
  • 6 cups chicken stock (or vegetable stock)
  • 4 cups chopped kale and/or chard (stems diced separately)
  • 2 cups potatoes (diced)
  • 1 teaspoon marjoram
  • salt and pepper ( to taste)
  • horseradish


Step 1. If sausage is Italian, boil it in a skillet with 1/2″ of water for about 3 min. per side
Step 2. In a large soup pot over medium high heat, heat oil and sauté the onion, stems and sausage for 5-8 minutes.
Step 3. Add the stock and potatoes. Bring to a boil and then reduce the heat to a simmer.
Step 4. Cook until the potatoes are soft, about 25 to 30 minutes, add greens for last 5-10 minutes.
Step 5. Salt and pepper to taste. Serve with horseradish, added to taste.
