Saltibarsciai (Lithuanian Cold Beet Soup)

Ingredients

  • 2-3 Medium red beets (cooked, peeled and mashed)
  • 2 Medium fresh cucumbers (coarsely chopped)
  • 2 hard-boiled eggs (coarsely chopped)
  • 6 tablespoons sour cream
  • 4 cups buttermilk
  • 8 sprigs fresh dill (finely chopped)
  • 1 cup scallions (finely chopped)
  • 6 Medium potato (1 per serving)

Directions

Step 1. Boil beets until soft (about 25-40 minutes, depending on size), then peel and mash
Step 2. Mix together all ingredients (except potato) and chill for 1 hour
Step 3. While beets are chilling, boil potatoes for ~35 minutes
Step 4. Add a dab of sour cream to each bowl, and serve with a whole potato on the side.
