A modernized, organic version of the giant nachos that were served at Armadillo World Headquarters in the ’70′s.

Ingredients

  • 1 Large tostado shell
  • 2oz refried black beans (canned or homemade)
  • 1oz white cheese (like Monterey Jack or Mozzarrello, sliced thin)
  • 5 medium slices jalapenos (fresh or from a jar)
  • 1/4 fresh avocado (sliced )
  • 1 tablespoon sour cream

Directions

Step 1. Heat oven to 350°.
Step 2. Slather a medium-thin spread of refried black beans over tostado.
Step 3. Layer with enough cheese to cover.
Step 4. Add jalapenos.
Step 5. Bake for about 12-13 minutes, or until cheese is perfectly melted.
Step 6. Arrange avocado slices aross the top of the nacho.
Step 7. Add a dollop of sour cream.
