Strawberry Blueberry Almond Sweet Potato Toast

  • 1 medium slice sweet potato (about .25-.375" thick)
  • 1.5 tablespoons Greek yogurt (or cream cheese)
  • 2 Large strawberries (sliced or equivalent)
  • 12 blueberries (approximately)
  • 6 almonds (sliced)


Step 1. Cut sweet potato into thin slices, about ¼ inch thick.
Step 2. Toast in pan on stovetop.
Step 3. Spread yogurt or cream cheese evenly across sweet potato toast.
Step 4. Top with sliced strawberries, blueberries and almonds.
