Yogurt

Ingredients

  • 1 Quart milk
  • 1/2 cup non-fat dry milk
  • 1 tablespoon white sugar (to feed the bacteria)
  • 2 tablespoons existing yogurt with live cultures (starter)

Directions

Step 1. Let the starter yogurt sit at room temperature while you’re heating and cooling the milk
Step 2. Heat the milk to 185ºF (85ºC) – use a double boiler (it’s worth it)
Step 3. Cool the milk to 110ºF (43ºC) – use cold water bath
Step 4. Warm the starter, while waiting for the milk to cool
Step 5. Add nonfat dry milk and sugar
Step 6. Add the starter — 2 tablespoons of the existing yogurt. Stir it in with a whisk
Step 7. Immediately pour into insulated container (Coleman or Igloo 2-qt. insulated beverage cooler works well)
Step 8. Cover and let sit undisturbed to incubate for 7-8 hrs. Someplace cozy like the water-heater closet is best.
